Domaines Ott By.Ott Rosé 2024, Côtes De Provence, Provence A.O.C., France: Domaines Ott By.Ott Rosé from Côtes de Provence A.O.C. is a dry, light-to-medium-bodied rosé of genuine Provençal charm, blended from organically farmed Grenache, Cinsault, Syrah and Mourvèdre sourced primarily from the estate vineyards of Château de Selle and Clos Mireille, with a pale luminous shell-pink hue and a delicate, fragrant nose of white peach, fresh-cut lychee, honeysuckle and a dusting of cardamom that leads to a fruit-forward, silky palate with vibrant acidity and a clean, mineral-kissed finish. Fourth-generation winemaker Jean-François Ott oversees production with the same meticulous organic philosophy that founder Marcel Ott established when he first planted these estates beginning in 1912, after falling in love with the Provençal landscape as a young agronomy graduate from Alsace who arrived near the Mediterranean coast in 1896. Domaines Ott has been part of the Louis Roederer Collection since 2004 and was recognized with a Wine Enthusiast Wine Star Award in 2022, cementing its status as one of Provence's most beloved and enduring rosé houses. Cave Spring Csv Cave Spring Vineyard Riesling 2023, Beamsville Bench, Niagara Escarpment, Ontario V.Q.A., Canada: Cave Spring CSV Cave Spring Vineyard Riesling from the Beamsville Bench, Niagara Escarpment V.Q.A. is a dry, medium-bodied Riesling of exceptional depth and poise, drawn from some of the oldest vinifera vines on the Bench, planted in 1978 with a prized German clone brought to Niagara by the Weis family and fermented with wild yeasts in oak barrels before spending twelve months aging on its lees, producing a wine of uncommon complexity and textural richness with a captivating nose of warm beeswax, candied ginger, bergamot, preserved lemon and a streak of cool limestone minerality that carries through to a mouthwatering, tightly wound palate and a long, resonant finish. Winemaker Gabe Demarco, widely regarded as one of the most innovative young winemakers in Niagara, uses up to 16 hours of skin contact before fermentation to build texture and savory depth, a technique that sets this CSV apart from most Ontario Rieslings and pushes the variety's expressiveness to its fullest potential. Cave Spring was founded in 1986 by the Pennachetti family alongside founding winemaker Angelo Pavan, and the estate's landmark On the Twenty restaurant, opened in 1993, is widely credited as Ontario's very first winery restaurant, igniting the regional food movement in Niagara long before it became fashionable.
