Toasty baked bread with green apple vibrancy in this zesty sparkling wine. This wine spent 8 months in oak then another 20 months in bottle where the second fermentation occured, as it does for champagne.

Food pairings: tempura.

Another strong showing from this customer-favourite from Flat Rock. Lemon-straw colour in the glass, with a nice mellow nose of applesauce, brioche, biscotti, yellow plum and nectarine. Medium body with lively mousse, and a ribbon of acidity providing freshness and vibrancy. Nice balance of toasty and fruity notions on the finish. This promises great versatility with foods.
