I love the way this wine opens up. But it does need to be decanted about an hour prior to serving to be properly enjoyed. I started in on it too soon and was at first disappointed because the wine seemed thin. However, after another half hour, the wine’s red berry nose and flavours unveiled themselves one by one. Veneto Passimento is a blend of Corvina, Croatina and Merlot. The wine is dry, but grapes are partially dried before fermentation and this concentration gives the wine its intense bittersweet, juicy cherry, red currant, cranberry and plum flavours. Lingering sweet spice and fresh herbs finish the wine. Tannins are round and velvet, and the wine is very drinkable now but can definitely hold a year. A perfect food match to this wine is a thick-crust pizza with a homemade Italian tomato sauce, fresh Thai basil and buffalo mozzarella. Yum!
