From Château Lamothe de Haux, Chombart & Speck Cave Mystère 2019 Merlot is produced from sustainably grown grapes. A dry, medium-bodied Bordeaux, bright and juicy on the palate with cherry, plum, ripe raspberry and fine herbs. Tannins are fine-grained. The wine is a collaboration between Ontario's Speck brothers (Henry of Pelham) and Bordeaux's Damien Chombart of Château Lamothe de Haux. The château's cellars date back to the 1700s, when the miles of limestone caves beneath the vineyards were excavated to provide building materials for the construction of the city of Bordeaux.
