Dandelion Vineyards Lion's Tooth Shiraz Riesling 2013, Mclaren Vale, South Australia, Australia: A towering, blockbuster Australian red wine blend of 95% Shiraz and 5% Riesling. Wood smoke and black fruit with a layered, full-bodied goodness. Great balance and character. The winemaker encourages the humble dandelion, considered a weed, to grow among the vines to suppress winter weeds, provide mulch in the summer and offer their Wishing Clocks in the spring to blow off to make wishes come true. Whole bunches of grapes from the MacMurtie's Vineyard are hand-harvested during the first week of March and fermented in open top fermenters with their stalks on and on top of some Riesling for 11 days while being hand plunged twice a day.
