Juiciness and acidity cry out for a food companion, especially for the hearty meat variety. Decant 1 hour. Some blackberry and anise on the finish. The grapes for this wine are grown at an altitude of 1067 metres above sea level, which gives the wine balance and a nervy edge due to excellent drainage for the vintages and cool microclimate for the grapes. This Shiraz (60%) and Cabernet Sauvignon (40%) blend spends 8 months in American and French oak, which imparts depth and richness to the wine, along with toasty oak and vanilla smoke aromas. Elderton Ode To Lorraine Cabernet Sauvignon Shiraz Merlot 2012, Barossa Valley, South Australia, Australia: This big, black fruited Australian red wine is produced by the Ashmead Family. It proffers a savoury, meaty note and mouth-watering acidity. Layered and delicious. I recommend many of the wines from this winery with my highest ratings, and deservingly so. Master craftsmanship here. Elderton winery is certified Carbon Neutral. I don't know who Lorraine is, but I'd like to thank her for being the inspiration for this wine. Penfolds Bin 407 Cabernet Sauvignon 2012, South Australia, Australia: A hallway breeze of minty cool rushes out of the glass, then you open the door to fleshy black fruit on the palate and a lovely long finish. Full-bodied, smooth. This is a flagship wine for Australia, from a master producer. Great complexity, balance, structure and depth. It will do well in the cellar, but I challenge you to wait as it's terrific now! The Cabernet Sauvignon grapes for this robust Australian red wine grow in the McLaren Vale, Barossa Valley, Robe, Coonawarra, Wrattonbully, Padthaway and Langhorne Creek. The 2012 Bin 407 Cabernet Sauvignon has polished tannins. The wine was aged in 30% new French oak barrels and remainder, in American oak barrels, of which 20% is new. Decant 1-2 hours. This full-bodied red wine is a blend of mostly shiraz grapes and some grenache, cabernet sauvignon, cinsault and a splash of viognier grapes. It's savoury, complex and delicious: wow! Cassis, blackberry and cedar forest. Meaty and enticing, full-bodied wonderful with a concentrated weave of anise, cigar box, pepper and meaty notes.
