Luca Malbec 2014, Uco Valley, Mendoza, Argentina: Full-bodied Argentine Malbec with lots of attractive mocha and chocolate on the nose from generous oak aging. Fleshy black fruit emerges on the palate. Delicious and layered. The grapes for this robust red wine come from three vineyards in the Uco Valley in Altamira, La Consulta and Gualtallary. The vines are an average 46 years old. The wine is then matured for 16 months in French oak, 60% of which is new. Pair with prime rib. Dandelion Vineyards Lioness Of Mclaren Vale Shiraz 2015, Mclaren Vale, South Australia, Australia: Full-bodied, robust and rustic with full-throttle black fruit, smoke, oak and spice aromas. Polished tannins and a long finish. This single vineyard Australian red wine is made from the Shiraz grape. These winemakers see the devil in the weeds, allowing dandelions to grow among the vine as they suppress other weeds and provide nutritious mulch. The "wishing clocks" of white seed in the spring provide new life. The Shiraz grapes are sourced form a single vineyard in the foothills of the McLaren Vale. The vines are planted in ironstone pebble laden with clay loam, over ancient Kurrajong Formation geology of silica cemented conglomerate ideally suited to grow Shiraz. Bunches are hand-picked in mid-March and fermented together in open top fermenters with ambient yeast and hand plunging for 12 days before basket pressing and aging in mostly French oak barriques before bottling without fining. Maison Roche de Bellene Cuvee Reserve Pinot Noir 2014, Burgundy A.C., France: This Nicolas Potel wine is medium-bodied, and smooth: Classic Old World pinot noir that offers aromas and flavours of tart cherries, earth and some herbal notes. Good acidity for food. Awesome price for Burgundy, especially for the quality designation of AC. Finishes with lovely spice and coffee notes. Pair with smoke salmon. There are 4,620 hectares planted for this Pinot Noir and the vines are 35 to 70 years old. They're planted at a density of 10,000 per hectare with a southwest exposure in clay and limestone soils at 234 metres above sea level. The grapes were picked by hand with fermentation via native yeast and 100% malolactic fermentation, no fining. Pair with game dishes.
