Abate Brunello Di Montalcino 2021, Tuscany D.O.C.G., Italy: High in Tuscany, old vines give Abate the fruit for this Brunello di Montalcino, fermented with wild yeast and given a long rest in French oak before bottling. Dark plum and black cherry carry real weight, backed by firm, grainy tannin that needs a rich plate to soften. Cocoa and dried herb notes turn up late, along with a savoury, almost meaty edge that's typical of top-tier Sangiovese. It has years ahead of it, so don't rush to open this one. Pair it with braised veal or slow-roasted lamb. Brunello Di Montalcino food pairings: braised veal, slow-roasted lamb, aged Brunello cheese.
