Sparkling Wine

Kew Fracette 2025, Ontario, Canada: France has Champagne. Italy has Prosecco. Canada now has Fracette, a sparkling style that VQA Ontario recognized as its own category. The name folds "frozen," for the Icewine that finishes it, into "facette," for the layers in the glass. It's a dry and complex sparkling wine. Stone fruit and white floral notes carry the nose of this Fracette, joined by a soft pear-like note. Kew Vineyards farms organically in Niagara-on-the-Lake, blending Pinot Noir, Chardonnay and Pinot Meunier with a splash of Vidal Icewine. The palate turns silky, apple and peach lingering through a rich, billowy mousse. This is a brunch wine through and through. Chill it well and pour with oysters or seared scallops. Fracette food pairings: oysters on the half shell, crab cakes with lemon aioli, seared scallops. Drink: 2026 - 2028 53239 11.7% XD 750 mL $26.95 Score: 92/100. September 2026. Full Review Add to Shopping Cart

Inniskillin Rosé Fracette 2025, Ontario, Canada: France has Champagne. Italy has Prosecco. Canada now has Fracette, a sparkling style that VQA Ontario recognized as its own category. The name folds "frozen," for the Icewine that finishes it, into "facette," for the layers in the glass. It's a dry and complex sparkling wine. Winemaker Nicolas Gizuk uses Cabernet Franc Icewine to spark the second fermentation in the Charmat tank. That's the technique that defines the whole Fracette category. Berry fruit leads, red currant and a candied edge of rhubarb weaving through, with grapefruit pith lingering at the back. The mousse stays small and steady, real acidity keeping the whole thing lifted rather than rich. This is built for celebrating something, anything, on a warm August evening. Serve it with smoked salmon on cucumber rounds or a strawberry tart. Rosé Fracette food pairings: charcuterie with aged cheddar, smoked salmon on cucumber rounds, strawberry tart. Drink: 2026 - 2028 53240 12.7% D 750 mL $34.95 Score: 94/100. September 2026. Full Review Add to Shopping Cart
