Amabuki Omachi Nama Junmai Ginjo Sake, Saga, Japan: Omachi is one of sake's most prized rice strains, first grown in Okayama back in the 1860s. This bottle from Amabuki ferments it with a yeast cultured from pink dianthus blossoms, a delicate, blossom-like lift running through the glass. It's smooth and well balanced in the mouth, with bright acidity keeping every sip clean. This is a sake built for warm-weather sipping, chilled and unhurried. Pour it with salmon sashimi or steamed pork gyoza. Junmai Ginjo Sake food pairings: salmon sashimi, lightly seasoned yakitori, steamed pork gyoza. Gérard Bertrand Heritage 560 Tautavel 2022, Tautavel, Côtes Du Roussillon, Roussillon A.P., France: An inviting weave of iris-petal florals and bramble-berry compote opens the glass, with a thread of herb-kissed plum and a whisper of smoked cherry on the finish. The mid-weight palate glides over a fine-grain tannin frame that gently holds each layer of bright barberry and plum-syrup flavor. A terrific value, it shines equally at a casual weeknight gathering or a more formal dinner party. Pair with braised lamb shanks in red-wine reduction with rosemary-roasted Tautavel food pairings: rare steak, rustic stew, game pot pie, roast chicken.
