White Wine

Frescobaldi Castello Di Pomino 2024, Pomino, Tuscany D.O.C., Italy: Frescobaldi's Castello Di Pomino from Pomino, Tuscany is a layered, medium to full-bodied white wine blending Chardonnay and Pinot Bianco with notes of white peach, Meyer lemon peel, chamomile and honeycomb. This dry wine displays focused structure and energetic acidity that will continue to develop over the next four years. Serve it chilled with grilled herbed chicken as the wine's crisp character complements the aromatic seasoning, or pair it with mushroom risotto where the wine's mineral-laced finish enhances the earthy flavors. Winemaker Lamberto Frescobaldi crafts this complex wine with remarkable purity, allowing the orchard fruit to shine through with tangy grapefruit and citrus zest lift alongside a silken yet vibrant texture. The wine's compact backbone and lingering stony finish showcase the quality possible from this historic Tuscan appellation. Red Wine

Wapisa Malbec 2023, Rio Negro, Patagonia, Argentina: Wapisa Malbec from Río Negro's Atlantic coast displays aromas of ripe boysenberry, dark cherry, toasted spice and a hint of dried violets. It's dry and medium-bodied with smooth tannins and vibrant acidity that keeps the concentrated fruit fresh and lively through the finish. Serve it at room temperature alongside beef burgers topped with aged cheddar and caramelized onions where the wine's fruit intensity and structure complement the rich, savory flavors, or pair it with herb-crusted rack of lamb where the wine's spice notes echo the rosemary and thyme while cutting through the meat's richness. Consulting winemaker Jean-Claude Berrouet, legendary former winemaker of Château Pétrus for 44 vintages, collaborates with winemaker Fabián Valenzuela on this 100% Malbec from Los Acantilados Estate, which is matured for eight months in a combination of French and American oak barrels. Owned by Patricia Ortiz of Bodega Tapiz, Wapisa is Argentina's only coastal Patagonian winery and pioneered the country's first underwater wine aging project in 2017, submerging bottles at varying depths off the Atlantic coast to harness the ocean's constant temperature and pressure for aging, and the winery is a proud partner in conservation with the California Ocean Alliance.
