Valdespino Inocente Single Vineyard Fino Dry Sherry, Jerez D.O., Spain: Inocente is a dry Fino Sherry produced from a single-vineyard, Macharnudo Alto, sourced from Palomino vines over 25 years of age in Albariza soils. Inocente is one of the only Fino wines fermented in 600 litre wooden casks using indigenous yeasts. A brandy produced from Palomino grapes is used for fortifying the sherry. Fine and briny on the nose with dried hay, toasted nut, yeasty and vanilla aromas. On the palate, the sherry is elegant with briny mineral flavours dried apple, citrus peel, olive and salted nut flavours. A great sherry. Enjoy chilled with Ibérico ham, olives and fish patés.
