A wine you don't want to swallow and feel fortunate to even have a sip of on your lips. The amber colour is starting to take hold of this 10 year old and the ripe apricot flavours have some fresh floral tones as well. Certainly the balance of acid and sugar is what makes these wines special, but I'm a sucker for that elegant silky mouthfeel. Climens has embraced the bio-dynamic movement wholeheartedly by using natural teas like; Chamomile when it is too wet or too dry. Fennel to fight off mildew. They will even use a form of acupuncture on the vines to stimulate biology. All this care and consideration ensures it is more than worthy of the Premiere Cru classification. A special wine like this deserves a special dish, like a foie terrine with red currants.
