Is it simply the fact that we are trapped inside for most of the year and we need to get out come summertime? Maybe the increased amount of oxygen makes the food and wine taste better. Or maybe natural light soothes a primal part of our psyches, making the meal experience that much better. Whatever the reason, I just love eating outdoors, and I\u2019m always on the lookout for new, easy and tasty picnic recipes. Thai-style shrimp and Canadian Cheddar spring rolls are fresh, simple and delicious, especially when paired with crisp, refreshing wines.<\/p>\n<p>The<a href=\"http:\/\/www.nataliemaclean.com\/winepicks\/wine\/petit-rimauresq-grenache-cinsault-syrah-rose-2011\/106556\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-9361\" title=\"Cote de Provence Rose 2\" alt=\"\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2012\/07\/Cote-de-Provence-Rose-2.jpg\" width=\"69\" height=\"249\" \/><\/a> great thing about spring rolls is that they can be made ahead of time and taste great at room temperature. This recipe, however, does involve a bit of cream, so make sure you refrigerate your spring rolls until you head outside. For the wine, I would recommend a dry, crisp Pinot Grigio, such as a Pelee Island, which is made right here in Canada. If you are thirsty for ros\u00e9, I would recommend a refreshing and dry C\u00f4te de Provence.<\/p>\n<p>Here\u2019s to eating outdoors!<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/www.dairygoodness.ca\/cheese\/all-you-need-is-cheese\/recipes\/thai-style-shrimp-and-cheddar-spring-rolls\" target=\"_blank\"><strong>Thai<\/strong><strong>-style Shrimp and Cheddar Spring Rolls<\/strong><\/a><\/p>\n<p><strong>Ingredients<\/strong>:<\/p>\n<p>1 lb (450 g) raw shrimp, shelled<br \/>\n2 cloves garlic, chopped<a href=\"http:\/\/www.nataliemaclean.com\/winepicks\/wine\/pelee-island-winery-pavilion-pinot-grigio-2008\/6401\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright  wp-image-9360\" title=\"Pelee Island Pinot Grigio\" alt=\"\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2012\/07\/Pelee-Island-Pinot-Grigio.jpg\" width=\"61\" height=\"249\" \/><\/a><br \/>\n1 tbsp (15 ml) honey<br \/>\n1 tbsp (15 ml) lime juice<br \/>\n1 tsp (5 ml) grilled sesame seed oil<br \/>\n1 Pinch crushed chilies<br \/>\n\u00bc cup (60 ml) 15% or 18% thick cream<br \/>\n3 tbsp (45 ml) peanut butter<br \/>\n16 large rice sheets<br \/>\n2 cups (500 ml) vegetables (pepper, carrot, cucumber, etc.) , julienned<br \/>\n2 cups (500 ml) lettuce, shredded<br \/>\n1\/3\u00a0 cup (80 ml) fresh cilantro, coarsely chopped<br \/>\n7 oz (210 g) Canadian Medium Cheddar, cut into sticks<\/p>\n<p><strong>Instructions<\/strong>:<br \/>\nPreheat grill to high heat. On a large square of aluminum foil, place shrimp, garlic, honey, lime juice, oil and crushed chilies. Cover with a second square of aluminum foil and seal tightly.<\/p>\n<p>Cook on grill for 5\u20137 minutes. Mix cream and peanut butter. Add shrimp and 2\u20133 tbsp (30\u201345 ml) of the cooking juice to the peanut butter mixture and let cool. Place rice sheets in warm water to moisten them, about 10\u201312 seconds.<\/p>\n<p>Transfer onto a clean cloth. Divide the shrimp, vegetables, lettuce, cilantro and Medium Cheddar onto the bottom third of each sheet, leaving 1\u02dd (2.5 cm) unfilled on each side.
