One wine that I\u2019m incredibly proud of and often turn to at this time of year is the <strong>Wente Vineyards Southern Hills Cabernet Sauvignon<\/strong>. The wine has plump aromas of blackberry, cherry, currant and cinnamon toast, and is an incredible value as it is all estate grown from sustainable vineyards.<\/p>\n<p>For the perfect pairing, I love this simple calzone recipe from my Aunt Carolyn\u2019s cookbook, <strong><a href=\"http:\/\/amzn.to\/tPA7FU\" target=\"_blank\">Sharing the Vineyard Table<\/a><\/strong>. She has had a huge influence on me regarding wine and food. She was the one who conceived <strong><a href=\"http:\/\/www.wentevineyards.com\/restaurant\/\" target=\"_blank\">The Restaurant at Wente Vineyards<\/a><\/strong> which opened in 1986, envisioning a wine country destination where our family\u2019s wines would complement dishes made with sustainable, locally sourced ingredients.<\/p>\n<p>I\u2019m a huge fan of this recipe because it\u2019s great comfort food, not to mention it\u2019s a cinch to pull off, which is important for me with my hectic schedule. A calzone is a perfect way to warm up after a long day and pairs perfectly with my <strong>Southern Hills Cabernet Sauvignon<\/strong>. I aim to make wines that are fruit-forward and food-friendly and the rich berry notes of the Cab are a strong complement to the saltiness of the ham. I hope you enjoy the combo as much as I do! Cheers!<\/p>\n<p><strong><\/strong><strong><\/strong>You can <strong><a href=\"http:\/\/bit.ly\/rC4oV5\" target=\"_blank\">find this wine<\/a><\/strong> in Ontario stores, along with stock numbers.<\/p>\n<p style=\"text-align: center;\"><strong>Calzone with Artichokes, Ham, Ricotta, and Parmesan<\/strong><\/p>\n<p style=\"text-align: left;\"><strong>INGREDIENTS<\/strong>:<a href=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2011\/10\/Wente-CabSauv.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-4328\" title=\"Wente CabSauv\" alt=\"\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2011\/10\/Wente-CabSauv.jpg\" width=\"76\" height=\"300\" \/><\/a><\/p>\n<p>Store bought or pre-made pizza dough<br \/>\n2 cups coarsely chopped artichoke hearts<br \/>\n2 ounces ham, cut into very thin slices<br \/>\n1\u00be cups ricotta<br \/>\n\u00bc cup grated Parmesan cheese<br \/>\n\u00bd grated Mozzarella cheese<br \/>\n2 teaspoons lemon juice<br \/>\n\u00bc teaspoon finely chopped fresh rosemary leaves<br \/>\n1\/8 teaspoon whole celery seed<br \/>\nKosher salt and freshly ground pepper<br \/>\nOlive oil, for brushing calzone<\/p>\n<p><strong>INSTRUCTIONS<\/strong>:<\/p>\n<p>Prepare and preheat the oven to 550 degrees F. To get the oven to 550 degrees F., place a pizza stone or bricks in the bottom of your oven. Turn the temperature to the highest baking setting possible. Your oven will take a bit longer to reach the required temperature.<br \/>\nShape the pizza dough into 4 rounds.<\/p>\n<p>Combine the artichoke hearts, ham, cheese, lemon juice, rosemary, and celery seed. Taste for seasoning and add salt and pepper if necessary.<\/p>\n<p>Place a quarter of the filling on half of each of the 4 rounds of dough. Moisten the edges with water, fold the dough over the filling, and seal the edges. Bake in the oven until golden brown, about 10 minutes.
