I like to start with quality ingredients made locally, like creamy <strong>Canadian Provolone cheese<\/strong>, which tastes like heaven when melted into these muffins.<\/p>\n<p>That\u2019s best washed down with a fresh and crisp Niagara white wine, like the <a href=\"http:\/\/www.nataliemaclean.com\/wine-reviews\/konzelmann-estate-winery-pinot-blanc-2013\/207986\"><strong>Konzelmann Estate Winery Pinot Blanc<\/strong><\/a>.<\/p>\n<p><a href=\"http:\/\/www.dairygoodness.ca\/cheese\/all-you-need-is-cheese\/recipes\/chili-n-cheese-cornbread-muffins?utm_campaign=CD15&amp;utm_medium=CI&amp;utm_source=NM&amp;utm_content=nov-rec-DW\" target=\"_blank\"><strong>Chili n\u2019 Cheese Cornbread Muffins Recipe<\/strong><\/a><\/p>\n<p><strong>INGREDIENTS:<\/strong><\/p>\n<p>1 \u00bd cups (375 mL) fine cornmeal <a href=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2015\/09\/Konzelmann-Estate-Winery-Pinot-Blanc-2013.png\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-24465\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2015\/09\/Konzelmann-Estate-Winery-Pinot-Blanc-2013.png\" alt=\"Konzelmann Estate Winery Pinot Blanc 2013\" width=\"64\" height=\"250\" \/><\/a><br \/>\n\u00bd cup (125 mL) all-purpose flour<br \/>\n2 tsp (10 mL) sugar<br \/>\n2 tsp (10 mL) baking powder<br \/>\n1 tsp (5 mL) baking soda<br \/>\n1 tsp (5 mL) chili powder<br \/>\n\u00bd tsp (2 mL) salt<br \/>\n1 \u00bd cups (375 mL) buttermilk<br \/>\n2 eggs<br \/>\n2 tbsp (30 mL) butter, melted<br \/>\n1 lb (450 g) lean ground beef<br \/>\n1 cup (250 mL) salsa, homemade or store-bought<br \/>\n1 \u00bd cups (375 mL) Canadian Provolone, grated<br \/>\n1 cup (250 mL) sour cream<br \/>\n\u00bd tsp (2 mL) ground cumin<br \/>\nSalt and freshly ground pepper<\/p>\n<p><strong>PREPARATION:<\/strong><\/p>\n<p>Preheat oven to 375\u00b0F (190\u00b0C). Line a muffin pan with paper or silicone baking cups.<\/p>\n<p>In a large bowl, mix all dry ingredients together. Using a whisk, add buttermilk, then eggs and butter. Set aside to rest.<\/p>\n<p>In a skillet, brown ground beef over high heat until completely cooked. Remove from heat, drain excess fat and add salsa.<\/p>\n<p>Fill 18 muffin cups halfway with batter. Add 1 tbsp (15 mL) of the meat mixture, sprinkle with cheese, add another 1 tbsp (15 mL) of the meat mixture and top with cheese.<\/p>\n<p>Bake on middle rack of the oven for 15 minutes.<\/p>\n<p>Meanwhile, mix sour cream with cumin and season with salt and pepper.
