This makes for the perfect entertaining dish.<\/p>\n<p>The citrus notes of the <a href=\"http:\/\/www.nataliemaclean.com\/wine-reviews\/nobilo-regional-collection-sauvignon-blanc-2014\/209901\"><strong>Nobilo Regional Collection Sauvignon Blanc<\/strong><\/a> marry well with the prawn and delicate hummus flavors.<\/p>\n<p><strong>Recipe<\/strong><\/p>\n<p>Nobilo Regional Collection Sauvignon Blanc Pan seared Black Tiger prawns, cauliflower hummus, warm leek &amp; rocket salad.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p><strong>The Tiger Prawns<\/strong><\/p>\n<p>30 black tiger prawn tails, de-veined and tail shell removed<a href=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2015\/08\/Nobilo-Regional-Collection-Sauvignon-Blanc.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-24153\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2015\/08\/Nobilo-Regional-Collection-Sauvignon-Blanc.jpg\" alt=\"Nobilo Regional Collection Sauvignon Blanc\" width=\"62\" height=\"250\" \/><\/a><br \/>\n3 tablespoons grape seed oil<br \/>\nSea salt<br \/>\nCauliflower hummus<br \/>\n4 tablespoons butter<br \/>\n4 cups shaved cauliflower<br \/>\nsea salt<br \/>\n3 cups milk<br \/>\n1 clove garlic, finely crushed<br \/>\n1\/2 teaspoon ground cumin<br \/>\n2 teaspoons lemon juice<br \/>\n2 teaspoons tahini paste<\/p>\n<p><strong>Leek &amp; rocket salad<\/strong><\/p>\n<p>2 cups leek ribbons (cut 80mm x 8mm)<br \/>\n3 cups rocket leaves, washed &amp; picked<br \/>\n1\/2 cup shaved cauliflower<br \/>\n2 tablespoons basil leaves, finely sliced<br \/>\n1 tablespoon basil oil<\/p>\n<p><strong>Basil Oil<\/strong><\/p>\n<p>3.5 ounces picked basil leaves<br \/>\n1 cup grape seed oil<\/p>\n<p><strong>Method<\/strong><\/p>\n<p><strong>Prepare the Tiger Prawns<\/strong><\/p>\n<p>Season prawn tails then quickly pan sear in a very hot pan till cooked.<\/p>\n<p>Arrange 5 prawn tails on a warm plate with a large spoonful of cauliflower hummus in the centre.<\/p>\n<p>Place the warm leek and rocket salad on top then finish with dots of basil oil around the outside.<\/p>\n<p><strong>Cauliflower hummus<\/strong><\/p>\n<p>Melt the butter in a pan, season the cauliflower and gently fry without color on a low heat for 10 minutes.<\/p>\n<p>Cover with milk and simmer till cooked.<\/p>\n<p>Drain then add garlic, cumin, lemon juice and tahini, blend to form a smooth puree.<\/p>\n<p>Serve hot.<\/p>\n<p><strong>Leek &amp; rocket salad<\/strong><\/p>\n<p>Cook leek ribbons in boiling salted water for 1 minute.<\/p>\n<p>Drain, then mix in a bowl with rocket, cauliflower, basil leaves, oil and season with salt to taste.<\/p>\n<p><strong>Basil Oil<\/strong><\/p>\n<p>Cook the basil in boiling salted water for 3 minutes then plunge into iced water.<\/p>\n<p>Squeeze out as much water as possible.<\/p>\n<p>Blend the basil and oil together in a jug blender until completely smooth and the color is a vibrant green.<\/p>\n<p>Allow to drain overnight in a paper coffee filter.<\/p>\n<p>Keep basil oil refrigerated in a plastic squeezy bottle until needed.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Sponsored Post by Nobilo Wines Prawns are such a quick and easy starter for any meal, especially with the addition of a perfumed cauliflower puree that has a soft cloud-like texture and a peppery warm salad.
