In this case, it&#8217;s Niagara\u2019s <a href=\"http:\/\/www.nataliemaclean.com\/wineries\/info\/henry-of-pelham-estate-winery\/2286\"><strong>Henry of Pelham Family Estate Winery<\/strong><\/a>, owned and operated by the Speck family.<\/p>\n<p>\u201cOnce I select the winery, I&#8217;ll choose the specific wines based on Eyal\u2019s menu.\u201d A French trained chef, Eyal\u2019s menus are inspired by the seasons, using mostly local and fresh ingredients.<\/p>\n<p>Often, says Rebecca, Eyal will change a dish to better work with the wine or even compliment the wine to my advice.<\/p>\n<p><a href=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/10\/Chef-Eyal-Liebman-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-21092\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/10\/Chef-Eyal-Liebman-2.jpg\" alt=\"Chef Eyal Liebman 2\" width=\"450\" height=\"546\" srcset=\"https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/10\/Chef-Eyal-Liebman-2.jpg 450w, https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/10\/Chef-Eyal-Liebman-2-247x300.jpg 247w\" sizes=\"auto, (max-width: 450px) 100vw, 450px\" \/><\/a>So how does chocolate fit into this process? Chocolate is a challenge to pair with wine as the bitterness can be problematic,\u00a0 while the flavours can be overpowering.<\/p>\n<p>For Eyal, a chocolatier with a long background as a pastry chef, the key is to use it as a supporting player in the dish, and to use different types of chocolate, depending on the flavour profile you desire.<\/p>\n<p>Sound familiar?<\/p>\n<p>Chocolate is similar to wine in that it can also be thought to bring its terroir\u2014sense of place\u2014to influence a dish.<\/p>\n<p>This is why Rebecca looks at wine, like the chocolate, as just another ingredient on the plate, rather than the star. Their special characteristics should elevate the whole meal, rather than outshine one ingredient or another.<\/p>\n<p><a href=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/10\/Chocolate-Dessert-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-21095\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/10\/Chocolate-Dessert-2.jpg\" alt=\"Chocolate Dessert 2\" width=\"450\" height=\"299\" srcset=\"https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/10\/Chocolate-Dessert-2.jpg 450w, https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/10\/Chocolate-Dessert-2-300x199.jpg 300w\" sizes=\"auto, (max-width: 450px) 100vw, 450px\" \/><\/a>\u201cChocolate is never dominating the dish,\u201d Rebecca explains. \u201cAnd because we use it in different ways, you can pair it with a variety of wines.\u201d<\/p>\n<p>For example, Chef Eyal\u2019s mid-course for the November 8 dinner is a Beef Marrow with Valrhona Dulcey &#8211; a blond, caramelized chocolate that Rebecca has paired with a botrytis-affected Riesling.<\/p>\n<p>The robust aromas and flavours of the wine will stand up well to both the fattiness of the beef marrow and to the buttery chocolate.<\/p>\n<p>An appetizer of Venison Raviolo made with chocolate-infused pasta will be paired with Henry of Pelham\u2019s flagship wine, the Reserve Baco Noir.<\/p>\n<p><a href=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/10\/Lamb-and-Chocolate.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-21097\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/10\/Lamb-and-Chocolate.jpg\" alt=\"Lamb and Chocolate\" width=\"450\" height=\"252\" srcset=\"https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/10\/Lamb-and-Chocolate.jpg 450w, https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/10\/Lamb-and-Chocolate-300x168.jpg 300w\" sizes=\"auto, (max-width: 450px) 100vw, 450px\" \/><\/a>At the end of the day, though, the real trick is to tap into your instincts, Rebecca says.
