Colder weather. It\u2019s enough to leave you feeling like you need a vacation. But if you can\u2019t do that, why not try the next best thing: a hearty, heartwarming bowl of soup.<\/p>\n<p>This recipe for <a href=\"http:\/\/www.dairygoodness.ca\/cheese\/all-you-need-is-cheese\/recipes\/cream-of-roasted-red-pepper-with-bocconcini\" target=\"_blank\"><strong>Cream of Roasted Red Pepper with Bocconcini Soup<\/strong><\/a> ain\u2019t your grandma\u2019s chicken noodle (not that there\u2019s anything wrong with that). It\u2019s a deliciously modern combination of soft and creamy Canadian Bocconcini\u00a0 and juicy roasted peppers, topped with a sweet tang of balsamic.<\/p>\n<p>It\u2019s one of my go-to soups, and whether you\u2019re eating it with friends or on your own, it\u2019s sure to please every palate.<\/p>\n<p>Pair it with a wine that also makes you feel warm and tingly inside, like a lovely and vibrant <a href=\"http:\/\/www.nataliemaclean.com\/wine-reviews\/featherstone-sauvignon-blanc-2013\/206396\"><strong>Featherstone Sauvignon Blanc<\/strong><\/a> from the Niagara Peninsula.<\/p>\n<p>With notes of lime citrus, it has a mouth-watering acidity that pairs well with vegetarian dishes and shellfish. But if you want something a touch sweeter, try pairing it with a nice ros\u00e9 like <a href=\"http:\/\/www.nataliemaclean.com\/wine-reviews\/girls-night-out-rose-2013\/207052\"><strong>Girls Night Out Ros\u00e9<\/strong><\/a>.<\/p>\n<p>It\u2019s a medium sweet wine that tastes great even if you\u2019re spending the night in (and without the rest of the girls).<\/p>\n<p>Hope you\u2019re making the best of the cooler temperatures and that you\u2019re looking forward to Thanksgiving as much as I am!<\/p>\n<p><a href=\"http:\/\/www.dairygoodness.ca\/cheese\/all-you-need-is-cheese\/recipes\/cream-of-roasted-red-pepper-with-bocconcini\" target=\"_blank\"><strong>Cream of Roasted Red pepper with Bocconcini Soup Recipe<\/strong><\/a><br \/>\n<a href=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/09\/Featherstone-Sauvignon-Blanc-2013-Novembeer-2013.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-20485\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/09\/Featherstone-Sauvignon-Blanc-2013-Novembeer-2013.jpg\" alt=\"Featherstone Sauvignon Blanc 2013 Novembeer 2013\" width=\"64\" height=\"250\" \/><\/a><br \/>\n<strong>Ingredients:<\/strong><\/p>\n<p>1 head of garlic<br \/>\n1 tbsp (15 mL) butter, melted, divided<br \/>\n2 onions, thickly sliced<br \/>\n4 red, orange or yellow bell peppers, seeded and cut into quarters<br \/>\nSalt and freshly ground pepper<br \/>\n2 cups (500 mL) tomato juice, no salt added<br \/>\n1 \u00bd cups (375 mL) of milk<br \/>\n6 oz (180 g) Canadian Bocconcini (3-4 small balls per serving)<br \/>\n1 tbsp (15 mL) balsamic glaze, homemade or store-bought<br \/>\n2 tbsp (30 mL) fresh parsley, finely chopped<\/p>\n<p><strong>Preparation:<\/strong> <a href=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/09\/Girls-Night-Out-Rose-2013-November-2014.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-20486\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/09\/Girls-Night-Out-Rose-2013-November-2014.jpg\" alt=\"Girls Night Out Rose 2013 November 2014\" width=\"63\" height=\"250\" \/><\/a><\/p>\n<p>Preheat oven to 450\u00b0F (230\u00b0C).<\/p>\n<p>Cut top off and place head of garlic on aluminum foil. Drizzle with some butter and close up foil. Cook in the oven for 35-40 minutes or until golden. Let cool and press to squeeze out cloves from their skins.<\/p>\n<p>In an oven-safe dish, mix onions and peppers with the remaining melted butter. Season with salt and pepper.<\/p>\n<p>Cook in the oven for 20 minutes or until vegetables are soft and nicely coloured.<\/p>\n<p>Transfer to a skillet. Add roasted garlic, tomato juice and milk. Bring to a boil, cover and simmer 15 minutes at medium-low heat.<\/p>\n<p>Using a food processor, blend until smooth.
