There\u2019s so many different recipes available online and I\u2019m always anxious to try something new.<\/p>\n<p>So when I found the following recipe for <a href=\"http:\/\/www.dairygoodness.ca\/cheese\/all-you-need-is-cheese\/recipes\/panko-avocado-with-havarti-pesto\" target=\"_blank\"><strong>Panko Avocado with Canadian Havarti Pesto<\/strong><\/a> I was excited for two reasons: one, because I love avocado; two, because I\u2019ve never tried it broiled in the oven.<\/p>\n<p>I also thought the Havarti pesto sounded like an interesting and yummy combination. Pesto is delicious on its own, but paired with creamy Canadian Havarti it\u2019s absolutely delectable. Sounds like a match made in heaven to me.<\/p>\n<p>If you\u2019re eating these as an appetizer, you\u2019ll want to serve them with a light wine, like a fruity ros\u00e9. <a href=\"http:\/\/www.nataliemaclean.com\/wine-reviews\/featherstone-winery-rose-2013\/193861\"><strong>Featherstone Ros\u00e9<\/strong> <\/a>is aromatic and rich, with notes of light spring flowers and a touch of refreshing citrus.<\/p>\n<p>You could also try it with a light white like <a href=\"http:\/\/www.nataliemaclean.com\/wine-reviews\/white-palette-2011\/188400\"><strong>White Palette<\/strong><\/a> from the Niagara Peninsula. It\u2019s an affordable and fresh floral wine that pairs well with light to medium flavours.<\/p>\n<p>Now enough writing for today, I think it\u2019s time I go outside and enjoy the wonderful weather!<\/p>\n<p><a href=\"http:\/\/www.dairygoodness.ca\/cheese\/all-you-need-is-cheese\/recipes\/panko-avocado-with-havarti-pesto\" target=\"_blank\"><strong>Panko Avocado with Havarti Pesto Recipe<\/strong><\/a><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-19263\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/06\/Featherstone-Rose-A.jpg\" alt=\"Featherstone Rose A\" width=\"66\" height=\"250\" \/><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>1 cup (250 ml) Canadian Havarti, diced<br \/>\n1\u20443 cup (75 ml) hot milk<br \/>\n1 tbsp (15 ml) homemade or store-bought pesto<br \/>\n1 tbsp (15 ml) lemon juice<br \/>\n1 tsp (5 ml) lemon zest<br \/>\n3 tbsp (45 ml) flour<br \/>\nSalt and freshly ground pepper<br \/>\n1 egg<br \/>\n2\u20443 cup (150 ml) panko breadcrumbs<br \/>\n2 avocados, peeled, pitted and each cut into 8 slices<br \/>\n2 to 3 tbsp (30 to 45 ml) melted butter<\/p>\n<p><strong>Preparation<\/strong>:<a href=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/06\/White-Palate-June-17-2014.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-19264\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/06\/White-Palate-June-17-2014.jpg\" alt=\"White Palate June 17, 2014\" width=\"58\" height=\"250\" \/><\/a><\/p>\n<p>Preheat oven to broil.<\/p>\n<p>With a blender or food processor, pur\u00e9e Havarti with hot milk.<\/p>\n<p>Add pesto and lemon juice and zest. Pour into a bowl and reserve.<\/p>\n<p>Place flour in a dish and season generously with salt and pepper.<\/p>\n<p>In a second dish, beat egg with a bit of water. Place panko in a third dish.<\/p>\n<p>Coat avocado slices with flour, dip in egg and then thoroughly coat with panko. Place avocado slices on a baking sheet lightly greased with melted butter. Brush them delicately with remaining melted butter.<\/p>\n<p>Broil in the oven for 3 minutes. Turn slices over and broil for another 2 minutes. Watch closely so they don\u2019t get overcooked.<\/p>\n<p>Heat Havarti pesto about 30 seconds in the microwave and serve with crunchy avocado slices.<\/p>\n<p>Tip: Microwave oven power levels vary: heat the Havarti pesto a few seconds at a time to avoid cooking it.
