Their combined acidity accented with fresh herbs is a great base for the following appetizer.<\/p>\n<p><strong>Salsa Ingredients<\/strong>:<\/p>\n<p>2\u00bd cups Roma tomatoes, seeded &amp; diced\u00a0\u00a0 \u00a0625 mL<br \/>\n\u00bd cup red onion, minced\u00a0\u00a0 \u00a0125 mL<br \/>\n\u00bc cup cilantro, minced\u00a0\u00a0 \u00a050 mL<br \/>\n1 jalape\u00f1o pepper, seeded &amp; minced\u00a0\u00a0 \u00a01<br \/>\n1 garlic clove, minced\u00a0\u00a0 \u00a01<br \/>\n2 Tbsp extra virgin olive oil\u00a0\u00a0 \u00a030 mL<br \/>\n2 tsp fresh lime juice\u00a0\u00a0 \u00a010 mL<br \/>\n\u00bd tsp salt \u00a0\u00a0 \u00a02 mL<br \/>\n\u00bc tsp Ground black pepper\u00a0\u00a0 \u00a01 mL<br \/>\n1 baguette (approx. 18-inches\/45 cm)\u00a0\u00a0 \u00a01<br \/>\n2 Tbsp extra virgin olive oil\u00a0\u00a0 \u00a030 mL<br \/>\n1 cup Balderson Royal Canadian Cheddar, Aged 2 Years, coarsely shredded 250 mL<\/p>\n<p><strong>Preparation<\/strong>:<\/p>\n<p>Combine ingredients in a bowl, cover and set aside.<\/p>\n<p>Slice baguette diagonally into <strong>\u00bd <\/strong>-inch (1 cm) slices. Lightly brush one side with olive oil.<\/p>\n<p>Place slices on grill over medium-low heat, and grill on each side until lightly toasted.\u00a0 Remove from grill, brushed side up.<\/p>\n<p>Spoon 1 Tbsp (15 mL) salsa on each slice. Sprinkle with <strong>\u00bd <\/strong>Tbsp (7 mL) cheese.<\/p>\n<p>Return slices to upper grill rack until cheese begins to melt. Transfer to serving platter; serve immediately.<\/p>\n<p>Makes 36 pieces.<\/p>\n<p><strong>Tips<\/strong>:<\/p>\n<p>For additional colour and presentation, use both white and coloured Balderson Royal Canadian Cheddar, Aged 2 Years.
