Today, it\u2019s no longer the wine of affliction: many kosher wines, made from classic grapes, are complex and full of character.<\/p>\n<p>In fact, kosher wines sales are growing fast \u2014\u00a0 up 12% since 2013. While no one tracks buyer demographics, some producers claim that up to half aren\u2019t even members of the Jewish faith\u2014they\u2019re just attracted to the wine\u2019s quality and its preparation, which guarantees purity. Kosher wines, like fashionable organic products, avoid pesticides and other chemicals.<\/p>\n<p>Many Jewish holy-day traditions include wine\u200b, such as Rosh Hashanah\u200b in September and Passover in the spring\u200b\u200b. During Passover on April 15 this year, celebrants drink four cups of wine to symbolize the four dimensions of freedom. On the Sabbath, meals start with the kiddush, a sanctification of the wine. At the last meal, the wine is blessed in a ritual called havdalah.<\/p>\n<p>\u201cKosher\u201d comes from the Hebrew word for good, fitting or proper. The kashrut, the strict Jewish dietary code, <a href=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/04\/kosher-u.gif\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-18214\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/04\/kosher-u-160x160.gif\" alt=\"kosher u\" width=\"160\" height=\"160\" srcset=\"https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/04\/kosher-u-160x160.gif 160w, https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/04\/kosher-u-150x150.gif 150w, https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/04\/kosher-u-35x35.gif 35w, https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/04\/kosher-u-125x125.gif 125w\" sizes=\"auto, (max-width: 160px) 100vw, 160px\" \/><\/a>classifies food into three categories: naturally kosher foods, such as fruit and vegetables; foods not kosher by nature, but can be made so by processing under strict supervision; and foods that aren\u2019t kosher and can never be, such as pork and shellfish.<\/p>\n<p>Packaged food and drink that are certified kosher usually bear a U symbol (for Union of Orthodox Jewish Congregations) or a K (for Organized Kashrut Laboratories).<\/p>\n<p>The kosher process is exacting. It must be strictly supervised, usually by a rabbi, and none of the work can be done on a holy day. Only Jews who observe the Sabbath can handle the wine; and even after it\u2019s <a href=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/04\/kosher-symbol.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-18215\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/04\/kosher-symbol.jpg\" alt=\"kosher-symbol\" width=\"151\" height=\"150\" srcset=\"https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/04\/kosher-symbol.jpg 151w, https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/04\/kosher-symbol-150x150.jpg 150w, https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/04\/kosher-symbol-35x35.jpg 35w, https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/04\/kosher-symbol-125x124.jpg 125w\" sizes=\"auto, (max-width: 151px) 100vw, 151px\" \/><\/a>poured into barrels and given a rabbinical seal, a shomer (watchman) has to guard it.<\/p>\n<p>Kosher wine is essentially made the same way as other wine, except that no leavens, wheat or animal products can be used. The yeasts must be certified kosher; and though ordinary wines use gelatin or egg whites to filter suspended particles before bottling, kosher wines must use non-animal filters such as the agent bentonite or kosher fish gelatin.<\/p>\n<p>There are actually two categories of kosher wine for consuming at religious ceremonies. The first must be handled and served only by Sabbath-observant Jews; but the second variety (called mevushal or boiled) can be handled by anyone and still maintain its integrity. That spiritual robustness is due to a process of flash-pasteurization: the t<a href=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/04\/kosherwinesmall.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-18213 alignleft\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/04\/kosherwinesmall.jpg\" alt=\"kosherwinesmall\" width=\"206\" height=\"300\" srcset=\"https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/04\/kosherwinesmall.jpg 206w, https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/04\/kosherwinesmall-160x233.jpg 160w, https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/04\/kosherwinesmall-125x182.jpg 125w\" sizes=\"auto, (max-width: 206px) 100vw, 206px\" \/><\/a>emperature of the wine is brought from 15\u00b0C to 90\u00b0C and back again, all in about ten seconds.<\/p>\n<p>This is believed to strengthen the wine&#8217;s spiritual essence, and to make it impervious to any corrupting influences. It was also done to scare off heathens, so they wouldn\u2019t use the wine in their own rituals. Unfortunately, it has also frightened away serious wine drinkers and given kosher wine a poor reputation.<\/p>\n<p>If the heating process is done incorrectly, it can create an unwanted cooked character. However, with modern technology and correct technique, some winemakers believe it actually enhances the wine\u2019s aromatics and stabilizes its tannins, fruit and colour.<\/p>\n<p>Some of the world\u2019s leading producers now also make kosher wine: classified Bordeaux ch\u00e2teaux Lafite-Rothschild, Giscours and La Gaffeli\u00e8re; Champagne\u2019s <a href=\"http:\/\/www.nataliemaclean.com\/wineries\/info\/laurent-perrier\/11968\"><strong>Laurent-Perrier<\/strong><\/a>; and Beaujolais vintner <a href=\"http:\/\/www.nataliemaclean.com\/wineries\/info\/georges-duboeuf\/1231\"><strong>Georges Duboeuf<\/strong><\/a>.\u00a0 From the New World, <a href=\"http:\/\/www.nataliemaclean.com\/wineries\/info\/hagafen-cellars\/3978\"><strong>Hagafen Cellars<\/strong><\/a> in California and <a href=\"http:\/\/www.nataliemaclean.com\/wineries\/info\/rodrigues-winery--distillery\/2575\"><strong>Rodrigues Markland Cottage Winery<\/strong><\/a> in Newfoundland. Yarden, Israel&#8217;s premium kosher wine, has won medals at Vinexpo, the annual wine Olympics held in France.
