It brings a smile to my face to see people finally coming out of hibernation and spending more time together, which makes hosting a spring gathering a great idea.<\/p>\n<p>If you\u2019re like me and want to invite some friends over to usher in the warmer weather, I have the most delicious recipe for you to try.<\/p>\n<p>Every time I make these <a href=\"http:\/\/www.dairygoodness.ca\/cheese\/all-you-need-is-cheese\/recipes\/havarti-and-zucchini-stacks\" target=\"_blank\"><strong>Canadian Havarti and Zucchini Stacks<\/strong><\/a> I receive tons of compliments on them &#8211; the melted Havarti is absolutely mouthwatering and perfectly complements the sweetness of the baked zucchini slices. Not to mention that they\u2019re easy to make, which makes them the perfect last minute addition to your party (one that will surely be welcomed by all).<\/p>\n<p>If you want to add a tasty wine to the menu, I recommend something like <a href=\"http:\/\/www.nataliemaclean.com\/wine-reviews\/quails-gate-chardonnay-2012\/192607\"><strong>Quails\u2019 Gate Chardonnay<\/strong><\/a>. It\u2019s a crisp and smooth wine that\u2019s beautifully balanced with tropical fruit aromas and a hint of oak.<\/p>\n<p>Another great wine to try is <a href=\"http:\/\/www.nataliemaclean.com\/wine-reviews\/featherstone-cabernet-franc-2012\/192495\"><strong>Featherstone Cabernet Franc<\/strong><\/a> from the Niagara Peninsula. It\u2019s an extra dry wine that\u2019s fermented in small batches and matured in oak barrels.<\/p>\n<p>Whatever you decide to make, I sure hope you make the best of this weather. It excites me to know that it\u2019s only getting started!<a href=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/03\/Quails-Gate-Chardonnay.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-18199\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/03\/Quails-Gate-Chardonnay.jpg\" alt=\"Quails Gate Chardonnay\" width=\"74\" height=\"251\" \/><\/a><\/p>\n<p><a href=\"http:\/\/www.dairygoodness.ca\/cheese\/all-you-need-is-cheese\/recipes\/havarti-and-zucchini-stacks\" target=\"_blank\"><strong>Canadian Havarti and Zucchini Stacks<\/strong><\/a><\/p>\n<p><strong>Ingredients<\/strong>:<\/p>\n<p>2 zucchini, sliced lengthwise \u00bc\u02dd (0.5 cm) thick and 4\u02dd (10 cm) long<br \/>\n3 plum tomatoes, seeded and quartered<br \/>\n1 tbsp (15 mL) melted butter<br \/>\n2 tsp (10 mL) fresh rosemary, chopped<br \/>\nSalt and freshly ground pepper<br \/>\n6 oz (180 g) Canadian Havarti, cut into 4\u02dd x 1\u02dd (10 cm x 2.5 cm) slices<\/p>\n<p><strong>Preparation<\/strong>:<a href=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/03\/Featherstone-Cab-Franc.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-18200\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2014\/03\/Featherstone-Cab-Franc.jpg\" alt=\"Featherstone Cab Franc\" width=\"63\" height=\"249\" \/><\/a><\/p>\n<p>Preheat oven to 425\u00b0F (220\u00b0C).<\/p>\n<p>On a parchment-lined baking sheet, spread out the zucchini slices on one side and the tomato quarters on the other.<\/p>\n<p>Sprinkle with melted butter and rosemary; season with salt and pepper.<\/p>\n<p>Roast in the oven for 15 minutes.<\/p>\n<p>Remove skin from tomatoes then place in a bowl.
