They can usually knock over most wines but not so with sparkling wine because of the bubbles.<\/p>\n<p>\u201cThe acidity in sparkling wine is a second reason. But yet that acidity isn\u2019t too strong. It doesn\u2019t come too forward. It deals with the food nicely.<\/p>\n<p>\u201cSo that means it can be paired successfully with even the toughest of foods, especially around the holidays when you\u2019re at the hors d\u2019oeuvres table or having cheeses or whatever.\u201d<\/p>\n<p><a href=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2013\/12\/champagne-tasting-xl.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-25722\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2013\/12\/champagne-tasting-xl-1024x526.jpg\" alt=\"champagne tasting xl\" width=\"648\" height=\"333\" srcset=\"https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2013\/12\/champagne-tasting-xl-1024x526.jpg 1024w, https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2013\/12\/champagne-tasting-xl-300x154.jpg 300w, https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2013\/12\/champagne-tasting-xl.jpg 1933w\" sizes=\"auto, (max-width: 648px) 100vw, 648px\" \/><\/a><\/p>\n<p>The acidity also makes it mouthwatering. \u201cSo it\u2019s such a great wine to not only start off your turkey dinner but also to have with the turkey. At our house we tend to overcook our turkey and it\u2019s dry, so we fix our cooking mistakes with wine. So any juicy mouthwatering wine is going to moisten whatever you\u2019re having it with.\u201d<\/p>\n<p>With turkey, MacLean suggests a dry sparkling wine, although you could have a touch of sweetness to pair with the cranberries and sweet potatoes.<\/p>\n<p>For a cocktail party with hors d\u2019oeuvres you might want a bit of sweetness, such as an off-dry still Riesling or off-dry sparkling wine which can handle more spicy and hot foods.<\/p>\n<p>With holiday desserts such as fruitcake, have something with more sweetness and a deep plummy flavour such as a sparkling Shiraz from Australia. Italy also makes a sparkling red wine.<\/p>\n<p>There are a lot of styles of sparkling wine, ranging from bone-dry to sweet.<\/p>\n<p>\u201cYou can even get, which is a unique animal to Canada, a sparkling icewine for dessert, which is really cool. It sounds like it\u2019s a nasty hybrid, but it\u2019s not. Never put it in the freezer.<\/p>\n<p><a href=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2013\/12\/champagne-opening-large.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-25723 alignleft\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2013\/12\/champagne-opening-large.jpg\" alt=\"Bottle of champagne with splashes over blue background\" width=\"347\" height=\"346\" srcset=\"https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2013\/12\/champagne-opening-large.jpg 347w, https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2013\/12\/champagne-opening-large-150x150.jpg 150w, https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2013\/12\/champagne-opening-large-300x300.jpg 300w, https:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2013\/12\/champagne-opening-large-60x60.jpg 60w\" sizes=\"auto, (max-width: 347px) 100vw, 347px\" \/><\/a>\u201cThe pressure inside a bottle of bubbly is equivalent to that inside city bus tires, so there are a few quick tips to make your New Year\u2019s Eve celebrations a blast, but not the bottle itself,\u201d MacLean says.<\/p>\n<p>Point the bottle neck at a 45-degree angle away from you and all other living creatures, as well as any breakables.<\/p>\n<p>Remove foil around the top of the bottle.<\/p>\n<p>Unscrew the wire with one hand while holding the cork with the other; the cork can come out under its own pressure once the wire is removed, so keep one hand on it, she says.<\/p>\n<p>With one hand over the cork, hold the bottom of the bottle with the other hand (it\u2019s easier putting your thumb inside the indentation at the bottom).<\/p>\n<p>Slowly turn the bottle in one direction using your bottom hand (the top hand stays still on the cork). Don\u2019t pull.
