I know it sounds clich\u00e9, but this year definitely flew by. And now that it\u2019s almost over I have a list of resolutions that I need to complete. My first to-do: learn how to make the perfect meatballs.<\/p>\n<p>Here\u2019s a recipe I found for <a href=\"http:\/\/www.dairygoodness.ca\/cheese\/all-you-need-is-cheese\/recipes\/cheddar-stuffed-meatballs-with-rosemary\" target=\"_blank\"><strong>Cheddar Stuffed Meatballs with Rosemary<\/strong><\/a> that is absolutely mouth-watering. Not only is it a delicious recipe, the meatballs are made with wholesome ingredients like real Canadian Cheddar that will help you beat the winter blues.<\/p>\n<p>My next to-do, finding the perfect winter Cabernet. <a href=\"http:\/\/www.nataliemaclean.com\/wine\/black-prince-winery-cabernet-franc-2007\/5380\"><strong>Black Prince Winery Cabernet Franc<\/strong><\/a> definitely does it. Aged for 18 months in country oak, it has peppery aromas with berry fruit notes and hints of tobacco, soft tannins, and a chocolaty finish. Now I am ready to finish my year in peace, and I look forward to discovering and sharing more amazing wine and recipes with you in the new one.<\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n<a href=\"http:\/\/www.nataliemaclean.com\/wine\/black-prince-winery-cabernet-franc-2007\/5380\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-16777\" alt=\"Black Prince Winery Cabernet Franc 2007 December 1st post\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2013\/10\/Black-Prince-Winery-Cabernet-Franc-2007-December-1st-post.jpg\" width=\"72\" height=\"251\" \/><\/a><br \/>\n<strong>Sauce<\/strong>:<br \/>\n\u00bd cup (125 mL) cranberry juice<br \/>\n\u00bd cup (125 mL) cranberries, fresh or frozen<br \/>\n3 tbsp (45 mL) maple syrup<br \/>\nSalt<br \/>\nGround pepper, to taste<\/p>\n<p><strong>Meatballs:<\/strong><br \/>\n1 lb (454 g) ground lean veal<br \/>\n1 egg, beaten<br \/>\n1 Slice of whole wheat bread, crumbled<br \/>\n2 tsp (10 mL) fresh rosemary, chopped<br \/>\n5 oz (150 g) Medium Cheddar block, diced in \u00bc\u201d (0.75 cm) cubes<\/p>\n<p><strong>Preparation<\/strong>:<\/p>\n<p style=\"text-align: left;\">Preheat oven to 450\u00b0F (230\u00b0C).<br \/>\nIn a small skillet, bring cranberry juice and fruit to a boil along with maple syrup. Cook 8-10 minutes.<\/p>\n<p style=\"text-align: left;\">Pur\u00e9e cranberries until smooth and add salt and pepper. Set aside, keeping warm or at room temperature.<\/p>\n<p style=\"text-align: left;\">In a bowl, mix veal, egg, bread crumbs and rosemary. Season generously. Shape small meatballs by coating the diced cheese with the meat mixture; cheese should be entirely coated.<\/p>\n<p style=\"text-align: left;\">Arrange meatballs on a baking sheet lined with parchment paper and place on top oven rack; cook 8-10 minutes or until golden and fully cooked.
