Not only is the air crisper and the weather perfect, it is a time when I\u2019m constantly reminded about all the wonderful things in my life that I\u2019m thankful for. Like great family and friends (which I\u2019m constantly surrounded by). In fact, the only thing that makes this time any better is being surrounded by amazing food and wine as well.<\/p>\n<p>I like to keep cooking during the holidays as easy and stress-free as possible so I can focus on what\u2019s really important: quality family time. So when I found this simple recipe for <a href=\"http:\/\/www.dairygoodness.ca\/cheese\/all-you-need-is-cheese\/recipes\/squash-with-herbs-soup\" target=\"_blank\"><strong>Squash with Herbs Soup<\/strong><\/a>, I knew it would be the perfect addition to our Thanksgiving Day smorgasbord of food. Made with melted and delicious Canadian Old Cheddar and fresh squash and herbs, it is a wonderful mix of Fall flavours.<\/p>\n<p>And if you want some great wine to complement your Thanksgiving meal, here are a few of my favourites. An always-pleasing wine is the <a href=\"http:\/\/www.nataliemaclean.com\/wine\/fonterutoli-marchesi-mazzei-chianti-classico-2010\/187239\"><strong>Fonterutoli Chiani Classico<\/strong><\/a>, from Tuscany. Juicy, robust, and rustic, it is as flavourful as Chianti can get. Another great pick is the <a href=\"http:\/\/www.nataliemaclean.com\/wine\/pondview-riesling-2010\/103287\"><strong>Pondview Riesling<\/strong><\/a> from Ontario. Its lovely notes of white peach, Asian pear, and baking spice are packed with flavour and also bring out the cornucopia of flavours present at your Thanksgiving table. So cheers, I think we\u2019ll all drink to that!<a href=\"http:\/\/www.nataliemaclean.com\/wine\/fonterutoli-marchesi-mazzei-chianti-classico-2010\/187239\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-16514\" alt=\"Fonterutoli Chiani Classico Oct 1\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2013\/10\/Fonterutoli-Chiani-Classico-Oct-1.jpg\" width=\"63\" height=\"249\" \/><\/a><\/p>\n<p><strong>Ingredients<\/strong>:<br \/>\n1 medium onion, chopped<br \/>\n1 tbsp (15 mL) butter<br \/>\n2\u00bd cups (625 mL) pureed squash<br \/>\n2\u00bd cups (625 mL) chicken broth<br \/>\n\u00bd tsp (2 mL) dried thyme<br \/>\n\u00bd tsp (2 mL) dried rosemary<br \/>\nSalt and pepper, to taste<br \/>\n1 Pinch of ground cumin<br \/>\n2\u00bd cups (625 mL) Milk<br \/>\n1 cup (250 mL) Canadian Old Cheddar cheese, grated<\/p>\n<p style=\"text-align: left;\"><strong>Preparation<\/strong>:<a href=\"http:\/\/www.nataliemaclean.com\/wine\/pondview-riesling-2010\/103287\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-16515\" alt=\"Pondview Riesling\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2013\/10\/Pondview-Riesling.jpg\" width=\"62\" height=\"251\" \/><\/a><br \/>\nIn a heavy saucepan, saut\u00e9 onion in butter until it&#8217;s transparent. Add broth, squash and spices. Salt and pepper to taste.<\/p>\n<p style=\"text-align: left;\">Heat on medium-low, then reduce to simmer for 15 to 20 min, stirring occasionally. Pur\u00e9e mixture.<\/p>\n<p style=\"text-align: left;\">Add milk and reheat, but do not boil. Remove from heat.
