In 2006, 4 generations later, the family turned to cheese making. Translated Alpindon means \u201cGift of the Alpine\u201d and is carefully modeled after French Beaufort d\u2019Alpage. This firm cheese is hand-rubbed and cave-aged for a minimum of 90 days.
