Long commutes. Multitasking half a dozen household crises. How can parents be expected to prepare something tasty in the precious little time they have between getting home and their children\u2019s first cries of hunger? They can\u2019t be \u2013 not without a little help. So this week I\u2019m suggesting a <span style=\"color: #000000;\">nutritious<\/span> and delicious recipe that is so fast to prepare it will leave you with enough time to treat yourself to a nice glass of wine. This<a href=\"http:\/\/www.dairygoodness.ca\/recipes\/hearty-lentil-pesto-and-colby-soup\" target=\"_blank\"><strong> hearty lentil, pesto and Canadian Colby soup<\/strong><\/a> pairs wonderfully with C\u00f4te du Rh\u00f4ne and Pinot Noir.<\/p>\n<p>The soup is very rich and savoury, and presents a great opportunity to enjoy a medium- to full-bodied dry white, such as the fruity Cono Sur Viognier, or the round and brisk <a href=\"http:\/\/www.nataliemaclean.com\/winepicks\/wine\/e-guigal-blanc-2011\/108176\"><strong>E. Guigal C\u00f4tes du Rh\u00f4ne Blanc 2011<\/strong><\/a>. If you would rather indulge in a glass of red, I would suggest a dry, light-bodied and fruity wine, such as <a href=\"http:\/\/www.nataliemaclean.com\/winepicks\/wine\/mirassou-winery-pinot-noir-2008\/15246\"><strong>Mirassou Pinot Noir<\/strong><\/a>.<\/p>\n<p>Here\u2019s to enjoyable weeknights!<\/p>\n<p><a href=\"http:\/\/www.dairygoodness.ca\/recipes\/hearty-lentil-pesto-and-colby-soup\" target=\"_blank\"><strong>Hearty Lentil, Pesto and Colby Soup<\/strong><\/a><\/p>\n<p><strong>Ingredients:<\/strong><a href=\"http:\/\/www.nataliemaclean.com\/winepicks\/wine\/e-guigal-blanc-2011\/108176\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-10300\" title=\"E. Guigal\" alt=\"\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2012\/09\/E.-Guigal1.jpg\" width=\"76\" height=\"250\" \/><\/a><\/p>\n<p>1 tbsp (15 ) butter<br \/>\n1 onion, chopped<br \/>\n2 celery stalks, finely sliced<br \/>\n1 large carrot, diced<br \/>\n2 cups (500 ml) sodium-reduced vegetable or chicken broth<br \/>\n1 can (540 ml) diced tomatoes<br \/>\n1 cup (250 ml) green cabbage, cut into pieces<br \/>\n1 cup ( ml) green and\/or yellow beans, cut into 1\u02dd (2.5 cm) lengths<br \/>\n1 can (540 ml) green lentils, rinsed<br \/>\n2 tbsp (30 ml) homemade or store-bought pesto<br \/>\n1\u00bd cups (375 ml) Canadian Colby, grated or diced<\/p>\n<p><strong>Instructions:<\/strong><br \/>\n<a href=\"http:\/\/www.nataliemaclean.com\/winepicks\/wine\/mirassou-winery-pinot-noir-2008\/15246\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-10303\" title=\"Mirassou Winery Pinot Noir 2008\" alt=\"\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2012\/09\/Mirassou-Winery-Pinot-Noir-2008.jpg\" width=\"64\" height=\"250\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>In a large saucepan, melt butter on medium heat and brown onions, celery and carrot for 3\u20134 minutes. Add broth, tomatoes, cabbage and beans. Bring to a boil and let simmer 5 minutes. Add lentils and pesto. Let simmer 5 more minutes.<\/p>\n<p>Divide into bowls and garnish generously with Colby.
