What do you do? Here&#8217;s what I did:<\/p>\n<p>Serves 4<\/p>\n<p><strong>Ingredients<\/strong>:<\/p>\n<p>1 massive overgrown zucchini\u2026 this one was 2 pounds 5 ounces. Failing that, use 4 6&#8243; zucchini.<br \/>\n1 small onion<br \/>\n2 cloves garlic<br \/>\n1 oz (by weight) grated romano cheese<br \/>\nOne large roma tomato, seeded &amp; diced<br \/>\n1 cup cooked arborio rice<br \/>\n\u00bc fennel bulb<br \/>\nHandful of flat parsley, chopped coarsely<br \/>\n1 tbsp olive oil<br \/>\n\u00bd lb shrimp<br \/>\n1 pinch hot pepper flakes<br \/>\nPanko bread crumbs<\/p>\n<p><strong>Instructions<\/strong>:<\/p>\n<p>Cut zucchini in half lengthwise. Scoop out pulp and seeds, leaving \u00bc in. shells. Place shells on a plate, cut side down. Cover and microwave on high for 3-5 minutes, depending on the size of the zucchini. Fill the zucchini halves with the following mixture:<\/p>\n<p>Heat olive oil, add garlic, onions, fennel, and cook until onion is starting to become translucent. Add chopped shrimp and diced tomato, continue cooking until shrimp is just turning pink. Remove from heat, transfer mixture to a bowl.
