You might feel relieved that your kids are back in school and away from the computer. You probably feel a twinge of regret at seeing them grow so fast and go up yet another grade.<\/p>\n<p>And you most certainly feel rushed as you run around collecting school supplies, new clothes and all the other activities triggered by their return to school. In the midst of this roller-coaster ride, let me propose a menu item that takes no time to cook, pleases everyone and spares you the additional chore of preparing lunches for the next day: <a href=\"http:\/\/www.dairygoodness.ca\/index.php\/cheese\/all-you-need-is-cheese\/recipes\/turkey-orange-and-monterey-jack-fajitas\" target=\"_blank\"><strong>Turkey, orange and Canadian Monterey Jack fajitas<\/strong><\/a> paired with Chardonnay and Valpolicella Ripasso.<\/p>\n<p>The turkey fajitas are easy to make and delicious, making them a delicious weeknight meal. Best of all, by adding a few extra ingredients you get a tasty and healthy <a href=\"http:\/\/www.dairygoodness.ca\/dairygoodness_site_en\/cheese\/all-you-need-is-cheese\/recipes\/turkey-and-monterey-jack-salad \" target=\"_blank\"><strong>Turkey and Canadian Monterey Jack salad<\/strong><\/a> to put in the kids\u2019 lunchboxes.<\/p>\n<p>Since children shouldn\u2019t drink wine, I\u2019m only going to pair wines with the fajitas, which should turn the adults\u2019 midweek dinner into something special. If you like a glass of red, I would recommend a medium- to full-bodied Valpolicella Ripasso, such as a smooth and supple <a href=\"http:\/\/www.nataliemaclean.com\/winepicks\/wine\/enzo-vincenzo-valpolicella-ripasso-doc\/17353\"><strong>Enzo Vincenzo<\/strong><\/a>. If you would rather have white, go for a warm weather Chardonnay such as a surprisingly complex <a href=\"http:\/\/www.nataliemaclean.com\/winepicks\/wine\/sol-de-andes-reserva-chardonnay-2009\/108204\"><strong>Sol de Andes Reserva 2009<\/strong><\/a>.<\/p>\n<p>Here\u2019s to the new school year!<\/p>\n<p style=\"text-align: left;\"><a href=\"http:\/\/www.dairygoodness.ca\/index.php\/cheese\/all-you-need-is-cheese\/recipes\/turkey-orange-and-monterey-jack-fajitas\" target=\"_blank\"><strong>Turkey, Orange and Monterey Jack Fajitas<\/strong><\/a><\/p>\n<p>Serves 4<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>1 tbsp (15 ml) butter<a href=\"http:\/\/www.nataliemaclean.com\/winepicks\/wine\/wine-review\/17353\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-10082\" title=\"Enzo Vincenzo\" alt=\"\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2012\/08\/Enzo-Vincenzo.png\" width=\"73\" height=\"250\" \/><\/a><br \/>\n1 onion, minced<br \/>\n1 garlic clove, chopped<br \/>\n1 bell pepper (your choice), cut into strips<br \/>\n1 tsp (5 ml) chili powder<br \/>\npinch of ground cumin<br \/>\n\u00be cup (180 ml) orange juice<br \/>\n\u00bd cup (125 ml) salsa<br \/>\n2 tbsp (30 ml) barbecue sauce<br \/>\n2 cups (500 ml) cooked turkey breast, minced or shredded<br \/>\n4 large or 8 small 9-grain tortillas<br \/>\n1 \u00bd cups (375 ml) lettuce, shredded<br \/>\n1 \u00bc cups (310 ml) Canadian Monterey Jack, grated<br \/>\n\u00bc cup (60 ml) fresh cilantro, coarsely chopped<\/p>\n<p><strong>Instructions:<\/strong><\/p>\n<p>In a large skillet, melt butter and brown onion, garlic and peppers for 3\u20134 minutes.<\/p>\n<p>Add spices. Cook 2 minutes.<br \/>\nMix orange juice, salsa and barbecue sauce. Add cooked turkey and mix well, then let cool.<\/p>\n<p>Mix lettuce, spinach and red cabbage. Add cilantro. Divide into containers suitable for a lunch box. Add diced Monterey Jack.<\/p>\n<p>Into other containers, divide the turkey mixture (the sauce will serve as the dressing). Come mealtime, add the turkey mixture to the salad.
