A delicious choice would be <a href=\"http:\/\/www.nataliemaclean.com\/winepicks\/wine\/southbrook-vineyards-triomphe-cabernet-franc-rose-2011\/104201\"><strong>Southbrook Triomphe Cabernet Franc Rose 2011<\/strong><\/a>, an organic wine from the Niagara Peninsula.<\/p>\n<p>Serves 4<\/p>\n<p><strong>Ingredients for the pork<\/strong><\/p>\n<p><strong><\/strong>one 2\u00bc\u00a0 to 2\u00bd lb pork tenderloin, trimmed<br \/>\n\u00bd tsp cinnamon<br \/>\n\u00bd tsp garlic powder<br \/>\n\u00bd tsp cumin seed<a href=\"http:\/\/www.nataliemaclean.com\/winepicks\/wine\/southbrook-vineyards-triomphe-cabernet-franc-rose-2011\/104201\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-10010\" title=\"2011 rose Aug 24, 2012\" alt=\"\" src=\"http:\/\/www.nataliemaclean.com\/blog\/wp-content\/uploads\/2012\/08\/2011-rose-Aug-24-2012.jpg\" width=\"67\" height=\"250\" \/><\/a><br \/>\n\u00bd tsp fennel seed<br \/>\n\u00bd tsp chili powder<br \/>\n\u00bc tsp black pepper<br \/>\n1 tsp brown sugar<br \/>\n1 tsp salt<\/p>\n<p><strong>Ingredients for the dressing<\/strong><\/p>\n<p><strong><\/strong>1\u00bd\u00a0 tsp grainy Dijon mustard<br \/>\n\u00bd tsp curry (toasted in a dry skillet 30 seconds until fragrant)<br \/>\n1\u00bd tbsp fresh lime juice<br \/>\n1 tbsp fresh orange juice<br \/>\n1 tsp honey<br \/>\n\u00bc tsp salt<br \/>\nfresh ground pepper<br \/>\n\u00bc cup olive oil<\/p>\n<p><strong>Ingredients for the salad<\/strong><\/p>\n<p><strong><\/strong>5 cups spinach<br \/>\n1 cup arugula<br \/>\n\u00bd red pepper cut into thin strips<br \/>\n\u00bd orange pepper cut into thin strips<br \/>\n\u00bc red onion sliced thin<br \/>\n2 nectarines or peaches, pit removed and cut into wedges<br \/>\n1 cup cantaloupe melon cut into chunks or use melon baller<br \/>\n1 avocado, pit removed and sliced<br \/>\n2 oranges, peeled and cut into slices or segments<\/p>\n<p style=\"text-align: left;\"><strong>Instructions:<\/strong><\/p>\n<p>In a spice grinder or using a mortar and pestle, combine the cinnamon, garlic powder, cumin seed, fennel seed, chili powder, black pepper, brown sugar and salt. Grind together to form a powder. Place the spice mix into resealable bag and add the pork tenderloin. Seal the bag and shake until the pork is completely covered in the spices. Allow to marinate for 30 minutes.<\/p>\n<p>Preheat the grill. Over medium high heat grill the pork tenderloin 10 minutes, turn and grill another 8 minutes or until the internal temperature reaches 145 F. Remove from heat and allow to rest 10 minutes.<\/p>\n<p>In a small bowl combine the Dijon mustard, toasted curry powder, lime juice, orange juice, honey, salt and pepper. Slowly whisk in the olive oil in a stream until emulsified. Season dressing to taste.<\/p>\n<p>In a large salad bowl combine the spinach, arugula, red and orange pepper strips and red onion with \u00bc cup of the dressing. Toss together. Divide the salad among four large plates. Top each serving with some of the nectarine wedges, melon balls, avocado and orange segments.<\/p>\n<p>Cut the pork tenderloin on an angle into \u00bd inch thick slices and arrange on each of the plates.
