This terrific Niagara Cabernet Merlot blend is nearly a 50-50 split between the two grapes, all of which were hand-picked grapes from the most mature Speck Family Estate vineyards. Low-yield vines concentrate the wine flavours. The wine was then aged for 20 months in French oak barrels. Aromas of cassis and blackcurrant. Needs cellar time and 1-2 hours decanting. Pair with rare steak.

Cabernet Merlot food pairings: braised lamb shanks with rosemary and roasted garlic accents, good quality chocolate.

Dark ruby, tart, tightly structured. Balanced medium plus acidity, big chewy tannins, concentrated. Dark plum, blackberry, baking spice, savoury. Pairs well with grilled red meats or Thai beef stir fry. Tasted 2015 vintage in May 2018, decanted 2h. 92 points
From the Short Hills Bench in the Niagara Escarpment wine region, Henry of Pelham, Speck Family Reserve Cabernet Merlot is a rich and elegant red wine blend produced form grapes that were hand-harvested from the oldest Speck Family Estate vineyards. Yields were kept low adding concentration to this full-bodied red. The wine was aged 20 months in French oak barrels. On the nose, pronounced aromas of blackberry, spice and smoke. Dry on the palate with ripe dark berries, smoky and spicy finishing long and luxurious. Perfect for steak night. - Community Wine Reviews
