Produced by Denis Bergey, prop., Château Le Temple 2015 is a silky Bordeaux red blend of 60% Cabernet Sauvignon, 35% Merlot and 5% Petit Verdot from the Médoc wine region. Fragrant with ripe cherry, red berry and sweet dried tobacco aromas, the wine is dry, medium-plus-bodied, vibrant and harmoniously balanced with dark cherry, ripe red berry, savoury and spicy flavours that linger on the palate. Tannins are fine and velvety. Pour with a veal Porterhouse chop. Drink or hold.

Food pairings: grilled steak, coq aux vin, duck confit, roast turkey, filet mignon, veal Porterhouse steak, roast chicken.

A little Merlot and Petit Verdot are blended into the Cabernet Sauvignon that makes up the bulk of this harmonious and silky red. Concentrated fresh dark fruit aromas followed by whiffs of rose petal and baking spice. The palate shows smooth tannins, integrated acidity, and balanced medium-plus body. At a very accessible stage of development, it does not require food, though definitely shows best at the dinner table. Would complement turkey breast, pork tenderloin, or lambs chops wonderfully.

A French Bordeaux blend with Cabernet Sauvignon leading and Merlot and Petit Verdot in the mix, this medium-bodied red has aromas of cherry. Medium tannins on the palate and a medium dry finish Decant or age further. Pair with poultry or pork. Tasted February 2020.
