Carlo Botter Doppio Passo Primitivo 2009, I.G.T., Salento, Puglia, Italy: Vintages Wine Panel: This Primitivo (aka Zinfandel) is rich with aromas and flavours of dried fruit, blackcurrant and cherry. It is concentrated, complex and nicely balanced by very soft tannins. The added intensity is achieved by the process called Doppio Passo, or double step. After the wine has been made, the winemakers add bunches of grapes that were left to dry to a raisin-like state on the vine, causing a second fermentation and creating a wine with increased richness and intensity. My note: Purple plum liqueur that tastes somewhat sweet because the fruit is so ripe even though this is a dry wine.
