Beamsville, Ontario, Canada: The winemaker Darryl Brooter put the entire vineyard through a 'wild' fermentation in French Oak barrels. After filling the barrels right to the top, he placed in the solid bung and let the wild yeast 'do their thing'. He decided not to put the wine through malolactic fermentation as the vineyard has amazing minerality which is the true character of the wine. This would be masked by MLF and he believes the true vineyard character needs to be seen. Exotic aromas of hazelnut, ripe peach and apricot with stunning mineral depths and a long finish. Hillebrand Winery Trius Cabernet Franc Cabernet Sauvignon Merlot 2007 , V.Q.A. Niagara Peninsula, Ontario, Canada: The 2007 vintage was the hottest season on record and the vineyards were healthy, combined with very low crop so they didn’t need. After spending an average of 13 months in barrels the individual lots were blended together for bottling. A blend of 365 barrels (out of possible, 1,500 were barrels) of 44% Cabernet Franc, 32% Cabernet Sauvignon and 24% Merlot. Trius red uses fruit from all over the Peninsula. However, in 2007 over 80% of the blend came from the winery's own vineyards and 93% of the blend came from within the Niagara-on-the-lake appellation.
