 | Location : At 30 Km from Bordeaux, at 8 Km from Libourne, the vineyards are situated en the "Entre deux Mers" area, but very close to the vineyards of Libourne (Pomerol, Saint Emilion, Fronsac). Surface : 46 hectares in total among which : - 43 hectares Red - 3 hectares White Grape varieties : Red : Merlot 80 %, Cabernet Franc 10 %, Cabernet sauvignon 10 % White : Sauvignon 70 %, Sémillon 30 %
Density : From 4000 to 5000 vine-plants/hectare. Wine-making : Following the year-long cycle of work in the vineyards, special care is given to this last stage of the birth of a vintage.
Red wine : The grapes are mechanically cropped, taken in small trucks that set them down in a machine that stalk the grapes, then crush the berries before sending them into a tank. When the tank is full, with pulps and skins, a cold maceration (from5 to 6°) is made during 48 hours. This maceration allows to extract the colour. Then, temperature is brought back to about 20°. Temperatures never rise over 32°, because beyond this would stop fermentations. At the end of fermentations, we leave the wine on contact with the marc during about two weeks, keeping temperatures at about 25°. Then comes time for pressing and running. The malolactic fermentations are made in tanks, keeping temperature at 25° Then a part of the harvest is barrelled from 15th November. |
