Unfortunately, thanks to retsina--the wine made with tree resin--Greece has a reputation for producing wine with all the charm of turpentine. But viniferous stereotypes never deter the Drink Wine and Giggle Gals, especially when the wine in question is from Santorini, one of the most beautiful islands in the world. As we sipped Sigalas' exquisite assyrtiko and reviewed the pronunciation of our best come-hither phrases in Greek, we could imagine grape vines straining to find water in Santorini's volcanic soil, like a Greek goddess desperate for the touch of her rogue lover. Sigalas assyrtiko is an acidic wine best suited to food that is off the beaten palate such as grilled octopus or marides, fried fishes they eat whole in Greece like little fishy French fries.
