 | Warm fermentation with frequent pump overs and a 20 day post fermentation maceration. Aged in a blend of new and one year old French and American oak barrels for a 1 year duration. Only the best barrels selected for the final blend. Smoky cassis and red cherry on the nose. The palate has fine tannins with soft plum, blueberry and smoky cherry flavours. A lengthy softer finish with featuring fine tannins. |
