Opinions about wine differ greatly as the experience is subjective. You may find it helpful to compare this critical evaluation of the wine with mine as well as your own:
The final period before harvest was extended primarily due to the decidedly temperate weeks following Christmas and into January. However as the harvest approached the consistent heat with temperatures regularly over 40deg. C., the grapes matured in a very balanced manor. At harvest the grapes tested on average at 24.8% balling; at a pH of 3.86 and TA of 6.10.

Although the First Dawn vineyard was the final shiraz vineyard harvested, the selected bunches for this wine was taken off the vines on February 23rd, two weeks later than the previous year. The selected bunches were held in coldroom environment for a few days to cool the berries and ensure that the structures were very even.

Following destalking, the berry selection further reduced the fruit content by approximately 20%, ensuring that only the finest quality grapes are selected. The entire fermentation was done in wood and the final dry wine matured for eleven months in first and second fill French oak barrels. It is a guaranteed principle on the estate that no natural winemaking process is interfered with.

At bottling the wine indicated beautiful vanilla flavours, typical of an excellent classical Shiraz. Since flavours have emerged providing the mystical intrigue of its ultimate potential and fulfilling an
accolade worthy of a perfect celebration.
