Tasting note:

A spectacular wine in all aspects! Honeyed apricot richness with get-down-on-your-knees balance, finesse and elegance. Peach preserves and a clean finish. What more do you want in a dessert wine? Food matches: As an aperitif with strong blue cheeses or seared foie gras, for dessert with fresh fruit..

Made from naturally frozen grapes picked at temperatures of -8 to -13 degrees Celsius at selected Niagara Escarpment vineyards, both our own and another vineyard on the Beamsville Bench. All Botrytis Cinerea affected fruit is removed prior to harvest.
Harvest Date: November 24th, 2007 to January 31st, 2008
Yields of approximately 15 hL/ha
Fermented in stainless steel
Released in Vintage Essentials at the LCBO
