 | Made from our own estate Cabernet Sauvignon, and several other selected Niagara vineyards. Harvest Date: October 17th,23rd and 28th, 2002. Yields of less then 2 Tonnes/acre were severly restricted. Approximately 1 bottle per vine. We netted the rows to prevent bird damage. (Less than 35 hL/ha). Fermented on the skins with manual cap punching lasting over a month followed by 20 months of aging in French Oak with 60% new and 40% 1 year old barrels. Released in Vintages at the LCBO |
