Date Picked: 21st October 2009
Fruit Condition: Healthy, 5% Noble Rot
Handling: Hand Picked into small 25 kg picking bins allowing the fruit to arrive at the winery’s sorting table intact. Fruit was hand sorted and crushed de-stemmed. Juice yield less than 600 litres per tonne and transferred into stainless. 36 hours of natural cold settling then racked off gross lees, racked into barrel for primary fermentation.
Fermentation: Barrel fermented with wild yeast strains. Fermentation temperature 24 degrees Celsius, began Nov 12/2009. Wine fermented to dry, the wine was kept on lees until 6th January 2011.

Bottling date: January 11th 2011 Total Production: 155 cases
Wine analysis at bottling:
pH 3.46 T.A 7.13 g/L
Alc. 13% R.S <3 g/L
