|For several centuries, the Gildas Cormerais family have been producing Muscadet at the heart of this AC. They are traditionalists, using long-established growing and production methods. By leaving the just-finished wine on its rich lees for several months following fermentation, it absorbs a small amount of carbon dioxide; not enough to create an obvious ‘fizz’, but sufficient to give the tip of the tongue a light tingle.
