Tasting note:

Buttery-rich and mouth-filling with aromas of ripe peach, pear and apple. Perfect for dinner parties.

Wine Making
Grapes for this Chardonnay were hand harvested, hand sorted and gently whole-cluster pressed in order to preserve their pure fruit flavors. Also to this end, only free-run and soft-pressed juice was ultimately used. At fermentation time, the wine was barrel fermented in 60% new French oak before undergoing malolactic fermentation to achieve a soft and silky mouthfeel. The wine was then aged in the barrel sur lie for eight months and hand-stirred every two weeks to encourage maximum flavor development.
Wine Makerer Notes
Brilliant silver-gold in color, the 2007 Calcaire Chardonnay offers up intense layered aromas of pear, apple blossom, lemon custard, mandarin, and toast. On the palate, it is at once lively and full-bodied, marrying flavors of vibrant citrus zest with richer notes of baked apple, cinnamon, and crème brulée before a long finish. Although ready to drink now, this nuanced wine will develop additional complexity with cellar time.
