VC: Both a pioneer and indefatigable innovator of Icewine, Inniskillin stands as the world leader of
Canada’s vinous treasure. The incredible 2007 vintage in Niagara is one for the record books.
The ideal conditions meant an earlier-than-usual harvest in January 2008 for this rich,
concentrated Icewine. Beautifully balanced, this elegant Riesling displays sweet/tart layers of
lemon/lime, honey and orange marmalade leading to a long refreshing finish. Delicious on its
own or serve as a luxurious match for fruit, a rich cheese plate or apple crumble and ice cream. My note: Riesling-based icewine is my favorite hands down. It has greater complexity and balance than other grapes because of the terrific combination of acidity and fruit. Notes of ripe pear, apricot, peach and honey. Innskillin certainly knows how to make a masterful icewine. This is truly a benchmark of the breed. Food matches: chicken with a mushroom sauce, ribollita, lobster thermidor, crab salad, hard cheeses.
