A big, sweet fruited Niagara red wine that uses the traditional Italian Appassimento method of drying grapes before fermentation to add more heft, body, colour, weight and alcohol to the finished wine. The 2012 vintage was a strong one. This wine features sweet black plums and blueberry jam. Pair with grilled steak.

Ripe, ripe, and ripe fruit galore! Dried dates, figs, black plum, vanilla and violets sprung from my glass. All I can say is holy fruit on this wine! It's full-bodied, off-dry (med), moderate acidity (wish it was higher though), velvety smooth tannins and a long finish. Enjoy with spicy braised beef tacos. A Niagara Peninsula Cab Sauv with dark berries and slight mint on nose. Some eucalyptus, mint, bell pepper, berry fruit and vanilla on palate. I found this to be lacking in fruit flavours for a Cab, somewhat disappointing.
