A full-bodied, supple red wine blend of Cabernet and Merlot that yields notes of violets, cassis and blackberry. There's some tannic grip on the palate so decant for an hour. Some herbal notes as well. Try this with grilled pork chops.

Pillitteri Estate Winery Cabernet Sauvignon Merlot 2011 is a dry, medium bodied wine. Aromas and flavours of cherry, green pepper, floral, and earthiness. (84/100) Tasted July 14, 2014

Pale garnet colour with medium(-) aromas of stewed red fruit, cranberry, dill, green pepper, prune, tobacco leaf, cedar.
The wine is dry with medium acidity, medium drying tannins. Medium-bodied with flavour characteristics of sour cherry, dark plum, cranberry, tar, anise,garrigue, fresh cut bell pepper, wood smoke.
Green aspects of this wine suggest Cabernet Sauvignon was picked a little early. It can be a tricky varietal in Ontario given our climate.
Pair with grilled steak, hamburger.
Suggest decanting.
Drink now. Ageing will not soften the green qualities in this wine and fruit is at it's max now.

This wine smells green and made me look twice at the lable to see if it was an assemblage of cabernet franc and merlot. But no, it is cabernet sauvignon, so it means that the sauvignon was not mature when it was harvested. Some people might enjoy the gree pepper and the raw tannins, but it's not for all palates.
