WINE MAKING

Premium Chardonnay grapes are gently pressed to release the purest of juice.

Barrel fermented and aged sur lie for 11 months in 80% French and 20% American oak barrels (40% new oak).

A partial (50%) malolactic fermentation to soften acidity and add complexity, yet retaining enough acidity to refresh the palate.

FLAVOUR PROFILE

Lemon yellow colour with a delicate bouquet of toast, biscuit, ripe apple and spice.

A medium to full-bodied Chardonnay with an elegant structure.

Flavours of green apple, pear, lemon, spice and delicate oak notes on the palate.

Lemon, spice and toast notes linger wonderfully on the finish.

CRITICAL ACCLAIM:

Best Chardonnay, Gold Medal – Cuvee Niagara 2009

Silver (Best in Class) – International Wine & Spirit Competition 2009, UK.

Silver Medal – Concours Mondial de Bruxelles 2009.
