Fruit Condition: Healthy
Handling: Machine harvested and placed into small, 400 kg open fermentation vats.
Fermentation: Fermented with commercial yeast strain BRL97 & RA17. Open- topped fermentors are twice as wide as they are high for maximum surface area and skin contact. Temperature during ferment reached 32 C over a 10 day fermentation period. Pressed November 11. Complete malolactic fermentation .
Canton oak barrels (American): 50% one year old, 50% three year old
Bottling date: September 9, 2009 Total Production: 351 cases

pH 3.55 T.A 6.75 g/L Alc. 12.5 % alc./vol R.S < 3 g/L
Cellaring potential: 3-5 years from vintage date
Tasting notes:
This packs considerable intensity, complexity and nerve, in the manner of traditional Euro cab franc. Pale garnet-ruby colour. Sweet lifted aromas of strawberry-raspberry pie and tobacco spice.
