Toasty, crisp and fresh on the nose. Lovely aperitif. On the palate , some sweetness with ripe peach and pear notes.

Food pairings: fruit turnovers, spicy Thai dishes with a papaya salad.

Clairette de Die Tradition is made with Muscat grapes. Like Champagne, a second fermentation occurs in the bottle – but here it’s a result of natural yeasts and sugars already present, rather than added. Plus, the wines are then decanted off the bottle and the bubbly is bottled separately under pressure. The sweetness can vary greatly and no dosage is permitted. This one shows a moderately sweet style. Sweet floral, peach and Muscat aromas. These are joined on the palate by pear and lime notes and a rush of acidity, giving great balance to the moderate sweetness. Enjoy it tonight. Source: Vintages Wine Panel, April 2012
